Coriander
CorianderCoriander is an annual herb with a strong smell. During the flowering period the plants can reach a height of 20-140cm. The stem is upright and green in color, while during the flowering period it turns violet or even red. The stem of mature plants is hollow, while the diameter of the stem at the base of the root is over 2cm. Alternate compound leaves, with three lobes -3 or more toothed lobes. The leaves during the flowering period turn violet or even red. The inflorescence is a compound umbel. The flowers have 5 petals, colored pink or sometimes white. The fruit is spherical or oval with a diameter of over 6mm. It prefers fertile soils, while in the first period of its growth it requires a sufficient amount of moisture, but after the growth of the shoot it is very resistant to drought and is considered a dry crop. High temperatures and sunshine during the flowering period increase the essential oil content.
Cumin
CuminCumin is cultivated in Argos and the surrounding villages and is sown every year in January or February, on slopes or on strong sands and ripens in May – June. In other words, it ripens somewhat earlier than anise that has a similar culture. With the difference that cumin is dry.
Cumin seed
The field where we will sow the cumin should not produce many grasses, nor should it be shaded by trees. It is plowed three times deep with a pithami and in the third plowing we harrow it well with an iron harrow to straighten and rub the soils well. It has significant water and fertilization requirements, and needs a lot of experience to give us rich quality production. we plant in late spring, the young watermelon plants that we have established in seedbeds since the beginning of spring, or we get ready-made plants from nurseries. The watermelon, like the melon, grows and bears fruit in warm periods. If we want to plant watermelon later, early summer, we can plant the watermelon seed directly in the ground. By direct planting in the field, the watermelon plant shows better rooting and gives better fruit production.
Carrot
CarrotCarrot, one of the most delicious and nutritious vegetables that we plant in the spring and autumn season. Famous for the sweet, crunchy and aromatic taste of its fleshy root, the carrot is a favorite food for young and old. It grows in the ground with its leaves protruding above the soil, as is the case with beetroot, radish, onion and garlic. The carrot is eaten fresh in winter salads along with cabbage and lettuce, but also cooked in various recipes, such as in the traditional bean salad. We can also make carrot cake, thanks to its sweet taste. Carrots need relatively cool conditions to grow and perform well, as well as plenty of sunlight. Ideal temperature conditions for carrot cultivation are between 16-18°C. Carrot cultivation is relatively resistant to winter frost, while at high temperatures that exceed 25°C the growth of the carrot root stops, it becomes woody and its color fades.
Watercress
WatercressWatercress is an annual plant of the cruciferous family. It is very easy to grow, grows quickly and withstands adverse weather conditions. It has abundant leaves with many slits gathered in rosettes. The stem appears somewhat early and branching, and produces white flowers and reddish seeds.
The cultivation of the Watercress is done exclusively for its leaves, which have a slightly caustic taste and stimulate the appetite, used for this as a kind of first-class spice.
The method of cultivating the Watercress is simple. It thrives in all soils. It is sown almost throughout the year – only during the summer the sowing must be done in the shade, so that they do not sow quickly. Therefore, in order to have a continuous harvest, the sowing must be done in stages, every 10 – 15 days.
Taraggon
TaraggonThe Latin name of the herb is Artemisia dracunculus. The name “tarragon” is of French origin, while in English it is rendered as “tarragon”. There are two varieties of the herb, Russian and French. The Russian, originally from Siberia, is considered the original plant from which the French variety originated. The aroma of Russian lags behind in sharpness compared to French which is generally considered superior. Its taste is reminiscent of aniseed due to their common substance anethole which increases appetite. It has many applications in cooking, enriching meat and fish sauces, boiled vegetables, mayonnaise, green salads, even ice creams or fruit salads. Add it towards the end of the food because prolonged cooking gives it a bitter taste and loses its aroma. Tarragon does not go well with other herbs with perhaps the only exception being lemon and chives. It is one of the best flavorings of vinegar and mustard. Its leaves contain iodine, potassium and vitamins A and C.
