Watercress is an annual plant of the cruciferous family. It is very easy to grow, grows quickly and withstands adverse weather conditions. It has abundant leaves with many slits gathered in rosettes. The stem appears somewhat early and branching, and produces white flowers and reddish seeds.
The cultivation of the Watercress is done exclusively for its leaves, which have a slightly caustic taste and stimulate the appetite, used for this as a kind of first-class spice.
The method of cultivating the Watercress is simple. It thrives in all soils. It is sown almost throughout the year – only during the summer the sowing must be done in the shade, so that they do not sow quickly. Therefore, in order to have a continuous harvest, the sowing must be done in stages, every 10 – 15 days.
Planting can be done outdoors with sun and indoors with lots of light, in pots or directly in the ground. It is watered frequently, avoiding drying out of the substrate between waterings. It is usually watered every 1-2 days in the summer and every 3 days the rest of the year.

Also, the Santorini eggplant is a very distinctive variety with impressive white round fruits and a delicious sweet taste that is not bitter.
Eggplant cultivation grows best in areas with a warm climate. It is worth mentioning that the eggplant needs more heat than the tomato crop and the pepper crop, as well as being much more sensitive to low temperatures and frost. Eggplant planting takes place from April onwards, when the temperature has risen noticeably. Eggplant grows in loose, fertile soils that have good drainage to remove excess water. When preparing the soil for cultivation and before planting the eggplant, we plow the garden and incorporate enough organic matter into the planting pits in the form of compost and digested manure, as well as complete organic fertilizer.

If we get ready-made plants from a nursery, we plant them at suitable planting distances of 30-40 cm between plants and 50-60 cm between rows. To plant the chives on the balcony, choose a pot with a diameter of 30 cm and add general-purpose potting soil, enriched in nutrients, that ensures good drainage.
